Lemon Sugar Cookie Recipe
Lemon sugar cookies are one of my go-to recipes through Spring and Summer. It is such an easy little change to make to my classic cookie recipe, that it’s almost a no-brainer if you have lemons on hand!
Recipe
Makes 18 cookies, Prep: 15 minutes, Bake: 15-20 minutes
Ingredients:
1 cup (2 sticks) butter, room temperature
1/2 cup granulated sugar
1/3 cup powdered sugar (if you don’t have this, add in another 1/2 cup granulated sugar)
1 egg
1 tbsp lemon zest
2 3/4 cup all purpose flour
1/4 tsp salt
Instructions:
In a large bowl, cream together butter and sugars until light and fluffy.
Add in egg and lemon zest. Then mix on medium speed until the egg is fully incorporated into the butter mixture.
Add in the salt and half of the flour, then mix into the wet ingredients until mostly incorporated. Add the remaining flour, then mix until no dry flour or crumbly pieces remain. The dough should be slightly tacky to the touch.
Transfer the dough to your work surface, topped with a sheet of parchment. Pour the dough out on the parchment, then flatten with your hands. Add a sheet of parchment or plastic wrap on top, then use your rolling pin to roll to approximately 1/4 inch thick, or your desired thickness.
Place the sheet of dough onto a baking sheet then place it in the fridge to chill for at least 30 minutes, but preferably overnight.
When ready to bake, preheat the oven to 350 degrees. Cut out dough to desired shapes. Place the dough onto a prepared baking sheet, then bake for 15 to 20 minutes, or until slightly golden around the edges.
Let cool for 5 minutes before transferring to a cooling rack. Let cool completely before decorating with icing.
