When it comes to Girl Scout cookies, there seem to be two camps: Thin Mints and Samoas/Caramel Delights. If you are on team Samoa, then you will love this recipe! It is packed with toasted coconut and caramel and flecked with chocolate shavings.

To really amp up the flavor of these cookies, I have paired it with a delicious caramel royal icing (recipe included). Caramel extract will be needed for that recipe.
